Make golfers in advance
Make 2-3 days in advance. Prepare cookie dough and tint copper. Roll and cut 5 golfers using gingerbread boy cutter. Cut 10 easels using pattern. Bake and cool. Add 1/2 tsp Gum-Tex to each of orange and yellow fondant; roll to 1/8-inch thickness. Decorate with royal icing: using tip #3, outline and fill in pants and shirt (smooth with cornstarch-dipped fingers). Pipe dots, outlines, and zigzag decorations. Using tip #2, pipe dot eyes and nose; outline mouth. Using tip #3, outline, pull-out dots, and C-shaped motions for hair; dots and beads for hair clips. Once dry, attach easels to the back with royal icing; let dry.

Make birthday sign
Cut sign using pattern. Print message with FoodWriters. Attach 2 lollipop sticks to the back.
Prepare cakes
Bake and cool 1 cake layer. Ice in light green. Roll dark green fondant to 1/8-inch thickness; cut into 1¾ x 19-inch strips. Use a knife to cut 1 to 1½-inch tall wavy tops for hills; attach to 6-inch cake. Repeat, wrapping 8-inch cake with 2 strips 13 inches long, and 10-inch cake with 2 strips 16 inches long. Use leftover fondant to shape 1½ x 2-inch speed bumps; attach to large ramps. Roll light brown fondant into ¼-inch diameter logs; attach on top of cake, leaving space for ramps to be placed. Imprint brick lines ½ inch apart. Roll a small piece of black fondant to 1/16-inch thickness; use the wide end of tip #3 to cut 2 circles for the holes.
Assemble
At the party: assemble cakes on cake stand. Place ramps and windmills. Insert sign. Place golfers, trimming easels if needed. Adhere tunnels, loops, flags, balls, and holes with icing.
