Prepare all the ingredients.

Place the peanuts in a preheated oven and roast at 150°C for about 20 minutes.

Once roasted, remove the peanut skins, then lightly crush the peanuts with a rolling pin. Keep them warm by returning them to the oven.

In a non-stick pan, add the brown sugar, white sugar, and shredded ginger. Add a little water and bring to a gentle boil over low heat.

Add the maltose and cook until the syrup thickens. Test by dipping a chopstick into the syrup and dropping a bit into cold water — it should form a thin thread and feel crisp when bitten; it is then ready.

Add the warm crushed peanuts to the finished syrup and mix quickly so that every peanut is evenly coated.
Step 7
Pour the mixture into a non-stick baking pan. Press it firmly flat and compact using parchment paper on top. If you do not have a non-stick pan, line a regular pan with oil paper first.
Step 8
After cooling slightly, unmold the candy, first cut it into long strips, then cut the strips into small pieces.
