A dish made by frying pre-cooked lamb strips, then coating them in a red sauce stir-fried with tomato sauce, peanuts, and other ingredients.

Red-Sauce Lamb Strips

Ingredients

fat-lean cooked lamb 350g
egg yolk 1
tomato paste 100g
skinned roasted peanuts 50g
sugar a pinch
cooked flour a pinch
cornstarch slurry to taste
neutral cooking oil 750g (about 100g consumed)
salt to taste
Sichuan pepper water to taste
MSG to taste
scallion segments to taste
ginger slices to taste
garlic slices to taste

Prepare the ingredients

Cut the lamb into strips about 1.5 cun (≈4.5 cm) long and 3 fen (≈1 cm) thick. Season with salt, Sichuan pepper water, and MSG, massaging them in. Then coat evenly with egg yolk and cornstarch slurry. Finely chop the peanuts with a knife.

Fry the meat strips

Heat 1.5 jin (≈750g) of oil in a wok over medium heat until it reaches about 50% hot. Slide the meat strips in one by one and fry until firm, then remove and drain off the excess oil. Pull apart any strips that are stuck together and brush off any flour residue.

Make the red sauce

Leave a small amount of oil in the wok and heat it up. Add the scallions, ginger, and garlic and fry until fragrant, then remove and discard them. Stir-fry the cooked flour until yellow, then add the tomato paste, chopped peanuts, fresh broth, salt, Sichuan pepper water, and MSG, and stir into a thick paste.
