Peanut Wafer Sandwich Cookies

Sandwich a filling of low-sweet peanut butter and powdered sugar between homemade wafers, stack the assembled layers, then cut into pieces.

Peanut Wafer Sandwich Cookies

Ingredients

low-sugar peanut butter 160 g
powdered sugar 50 g
wafer cookies (must be crispy) to taste

Prepare the cookies

First make sure the wafer cookies are all crispy; otherwise place them in an oven at 180°C for about 1 minute, or use an egg-roll mold or a flat pan to crisp them up again.

Make the filling

Stir the peanut butter and powdered sugar together until evenly combined. If the weather is too cold, the peanut butter can become very stiff and hard to spread, so warm it slightly.

Fill the wafers

Find 4 wafers of the same size and thinly spread about 10 g of peanut butter mixture on each of 3 of them, then stack the 4 wafers together.

Set the shape

Press a plate on top so the stack stays flat and the layers stick together neatly.

Cut into pieces

Once everything is done, cut each stack into 4 equal portions. There is no need to trim the edges or cut them into perfect squares like store-bought versions; the slightly rustic, natural shape is part of the homemade charm.
