Phoenix Eye Quail Eggs

Phoenix Eye Quail Eggs

Ingredients

quail eggs (boiled, peeled, halved) 10
shrimp paste 350 g
bread (cut into 20 almond-eye shaped slices) 250 g
light soy sauce 2 tbsp
peanut oil (for frying) 1000 g

Step 1

Boil the quail eggs, peel them, and cut each one in half. Cut the bread into 20 slices, then trim into almond-eye (oval) shapes.

Spread the shrimp paste onto the bread, nestle the quail egg halves into the center of the shrimp paste with the yolk facing up, forming a phoenix-eye shape. Lower into hot oil and fry until golden yellow.
