Ingredients

Yellow Croaker (cleaned, scored with cross-hatch cuts on both sides) 1
Pickled Mustard Greens (cut into segments, blanched in water) 150g
Southern Tofu (cut into small rectangular cubes) 200g
MSG 3g
Salt 2g
Ground White Pepper (add before serving) 2g
Scallion (cut into small horse-hoof shaped segments) 5g
Chicken Broth 1000g
Cilantro 2g
Sesame Oil (drizzle before serving) to taste
Cooking Oil (for frying the yellow croaker) to taste

Ingredient Preparation

Clean the yellow croaker and score both sides with cross-hatch cuts. Cut the scallion into small horse-hoof shaped segments. Cut the pickled mustard greens into segments and blanch in water briefly. Cut the southern tofu into small rectangular cubes.

Fry the Fish

Heat a wok with cooking oil over high heat, fry the yellow croaker until golden brown, then remove and set aside.

Simmer

In a separate pot, combine chicken broth, seasonings, tofu cubes, fried yellow croaker, and blanched pickled mustard green segments. Bring to a boil, then reduce to low heat and simmer for about 15 minutes.

Serve

Before serving, add ground white pepper, drizzle with sesame oil, and garnish with cilantro.
