Pickled Mustard Greens and Yellow Croaker Soup

Pickled Mustard Greens and Yellow Croaker Soup

Ingredients

yellow croaker 2
pickled mustard greens, chopped to taste
scallions, chopped to taste
scallion segments to taste
ginger slices to taste
cooking wine to taste
salt to taste
black pepper powder to taste
stock to taste

Instructions

Step 1

Heat oil in a pan, add the yellow croaker and pan-fry until both sides are lightly golden, then remove and drain the oil. Leave a thin layer of oil in the pan, stir-fry the chopped pickled mustard greens, then set them aside. Return the yellow croaker to the pan, add the stock and water along with the ginger slices, scallion segments, and cooking wine. Bring to a boil over high heat, then continue cooking for 5–6 minutes until the broth turns milky white.

Discard the ginger slices and scallion segments, add the stir-fried pickled mustard greens, and continue cooking for 2 minutes. Season with salt and black pepper powder to taste, stir until evenly combined, sprinkle with the chopped scallions, and serve.
