Pork Bone Lotus Root Corn Soup

This comforting soup combines tender pork bones with the earthy crunch of lotus root and the natural sweetness of corn. Simmered gently with ginger and scallions, it yields a clear, aromatic broth that is perfect for a warm, simple meal.

Step 1
Wash the bones, put them in a pot with cold water, bring to a boil over high heat, maintain for 3 minutes, and fully boil out the impurities inside.
Step 2
Slice the lotus root, cut the corn into sections, and cut the carrot into sections. To prevent oxidation and darkening, the lotus root can be soaked in water.
Step 3
Slice the ginger and tie the scallions into a knot. (I cut away the scallion whites here, so only the green parts are visible; having the scallion whites is best)
Step 4
Put the bones, corn, and lotus root into the pot together, add a few red dates (optional), bring to a boil over cold water, then turn to low heat and simmer for 30 minutes.
Step 5
After 30 minutes, open the lid, remove the scallion knot, and discard it. Add the carrot, cover the lid, and simmer over low heat for 20 minutes.
Step 6
Open the lid, season with salt and pepper, bring to a boil again, then remove from the pot and serve.
