Story

This simplified version of the traditional Beijing classic brings together silky tender pork coated in glossy sweet bean sauce with crisp, cool tofu skin rolls. The fresh crunch of carrot and cucumber alongside the sharp bite of scallion whites balances the savory richness, making each bite feel light yet satisfying.

Ingredients

pork tenderloin 200g
sweet bean sauce 50g
tofu skin 2 sheets
cooking wine as needed
egg white as needed
white pepper powder as needed
starch as needed
light soy sauce as needed
dark soy sauce as needed
white sugar as needed
carrot

Instructions

Step 1

If you have time, slightly freeze the meat first, then it will be easier to cut. Mine was already frozen.

Add half an egg white, a suitable amount of salt, white pepper powder, and starch, then stir until evenly mixed.

Cut the carrot, cucumber, and scallion whites into thin strips.

Blanch the tofu skin in boiling water, then place the carrot, cucumber, and scallion white strips on top.

Roll into a cylindrical shape.

Cut diagonally into segments about every 2 centimeters.

Arrange the cut pieces onto a plate.

Add 50 grams of sweet bean sauce, 15 grams of sugar, one spoon of cooking wine, one spoon of dark soy sauce, one spoon of light soy sauce, and a suitable amount of water, then stir until evenly mixed.

Add a suitable amount of oil to the pan, and when it reaches about 40% heat, add the meat strips and loosen them. It is best to use chopsticks to stir in one direction, so they will separate easily and the meat strips will not break.

When the meat strips turn white, add the evenly mixed sauce.
