Pork Rib and Winter Melon Soup

Step 1
Peel and deseed the winter melon and cut it into chunks, the same as the carrot.
Step 2
Place the winter melon, carrot, and the pork ribs that are already about 80% cooked into the pot. Add water until it covers the ingredients, add sliced scallion, ginger, and garlic, bring to a boil over high heat, then reduce to low heat and simmer slowly. Cook until the winter melon is tender but still holds its shape. Add salt to taste just before finishing.
Step 3
Drizzle a few drops of sesame oil when serving. The flavor is fresh and aromatic.
