Pork Rib Rice
A homestyle dish of marinated pork ribs simmered together with soaked rice in a clay pot.
Ingredients
Instructions
Step 1
After washing the rice, soak it for 1 hour in advance (pre-soaked rice cooks more easily and is less likely to burn at the bottom of the pot)
Step 2
Add salt, soy sauce, cooking wine, cornstarch, oil, shredded ginger, and minced garlic to the pork ribs, mix well, and marinate for 15 minutes.
Step 3
Grease the inner walls of the clay pot (to prevent burning at the bottom), then pour the soaked rice into the pot. Turn the heat to medium first; once the water starts boiling, reduce the heat to low. When the rice starts bubbling and forming small holes, add the marinated pork ribs to the pot, spread them out with chopsticks, then cover the pot and simmer on low heat for 5 to 10 minutes (it is done when you no longer hear the sound of boiling water, only a gentle sizzling).
Step 4
Then turn off the heat, let it rest covered for 10 minutes before opening the lid. Sprinkle with chopped scallions, cover again, and let it rest for 1 to 2 more minutes before serving.
