Breaded Chicken Cutlet

Ingredients

chicken breast (sliced in half, scored on both sides) 250 g
breadcrumbs 300 g
cooking wine (for marinating) 2 g
salt (for marinating) 3 g
scallion (sliced, for marinating) 2 g
ginger (sliced, for marinating) 2 g
beaten egg (for coating) 6 g
oil (for frying) 80 g
cornstarch (for coating) to taste

Instructions

1

Marinate the Chicken Breast

Slice the chicken breast in half and score both sides with a crisscross pattern. Marinate with salt, cooking wine, and sliced scallion and ginger for about 30 minutes.

2

Coat with Breadcrumbs

Coat each slice in beaten egg, cornstarch, and breadcrumbs, pressing firmly so the coating adheres well.

3

Fry

Heat oil in a pan to about 80% hot, add the prepared chicken cutlets, and fry until golden brown. Remove and plate.
