Pork Stir-Fried with Scallions
A Beijing-style stir-fried pork dish with rich scallion aroma and a crisp, tender texture.
Ingredients
pork (lean meat, sliced, mixed with sweet bean sauce and a little cooked oil)
200 g
scallion whites (cut into thick diagonal strips)
50 g
vegetable oil
75 g
sesame oil

sweet bean sauce

MSG
to taste
Chinese black vinegar
to taste
soy sauce
to taste
Sichuan pepper powder
to taste

ginger (julienned)

Step 1
Slice the lean meat and mix with sweet bean sauce and a little cooked oil. Cut the scallion whites into thick diagonal strips.

Add oil to the wok and heat over high flame. Add the meat slices and stir-fry to separate them. When they are about 60% cooked, add the scallion strips and ginger shreds, quickly stir-fry a few times, then add the vinegar, soy sauce, Sichuan pepper powder, MSG, and sesame oil in sequence. Toss and flip the contents. When the scallions are bright and crisp, it is ready.
