Shrimp Congee
A fragrant congee simmered from Chinese white shrimp, dried scallops, and rice.
Ingredients
Fresh shrimp (cut open to remove the vein)
to taste
Dried scallops (rehydrated and shredded)
to taste
Rice (soaked in water for about an hour, then cooked into porridge)
to taste
Salad oil (a few drops added during soaking)
a few drops
Minced cilantro (sprinkled in before serving)
to taste
Minced celery (sprinkled in before serving)
to taste
Pickled young ginger (side)
to taste
Instructions

Soak the rice
Soak the rice in water for about an hour before cooking it into porridge, adding a few drops of salad oil during soaking.

Add the dried scallops
While the porridge is simmering, shred the rehydrated dried scallops and add them to the pot to cook together.

Add the shrimp
Cut the shrimp open to remove the vein, then add them to the porridge about five to ten minutes before it is done.

Season and serve
Sprinkle minced cilantro or celery over the congee just before serving for extra flavor.
