Praline Millefeuille

A classic millefeuille layered with caramelized puff pastry, praline cream, and crisp flakes.

Praline Millefeuille

Ingredients

classic puff pastry 630 g
powdered sugar to taste
praline buttercream 500 g
praline crisp 150 g
caramelized nuts (for decoration) to taste

Instructions

Roll and Chill

Roll the puff pastry into a rectangle about 33 x 52 cm, place it on parchment paper, dock it with holes, and refrigerate for 20 minutes.

First Bake

Bake in a 200 degrees C (400 degrees F) oven until partially cooked (about three-quarters done).

Sugar Caramelization

Remove from the oven, dust generously with powdered sugar, raise the temperature to 240 degrees C (475 degrees F), and return to the oven for 2-3 minutes until the sugar caramelizes.

Cutting

After cooling, trim the edges and cut horizontally into three equal rectangles; select the best piece for the top layer.

Assembly

Spread a 1.5 cm thick layer of praline buttercream on one pastry sheet and cover with the second sheet. Add the praline crisp, spread another layer of buttercream, and cover with the third pastry sheet.

Decoration

Decorate the top with caramelized nuts.
