Yellow Croaker Soup

Ingredients

yellow croaker fillet 200 g
tender bamboo shoots (finely chopped) 50 g
cooked ham (finely chopped) 20 g
egg (beaten) 1
scallion (half cut into segments, half finely chopped) to taste
ginger (finely chopped) to taste
ginger juice to taste
cooking wine to taste
salt to taste
MSG to taste
sesame oil to taste
clear broth to taste
wet cornstarch slurry to taste
peanut oil to taste

Prepare the Ingredients

Wash the yellow croaker fillets and cut into slices 4 cm long, 2 cm wide, and 1 cm thick. Finely chop the bamboo shoots and cooked ham. Crack the egg into a bowl and beat well. Wash the scallions and ginger; cut half of the scallions into segments and the other half finely chopped, and finely chop the ginger.

Cook the Dish

Heat a wok over high heat, add peanut oil until hot, and bloom the scallion segments and chopped ginger. Add the fish slices, pour in the cooking wine and ginger juice, then add the clear broth, bamboo shoots, and salt. Once boiling, skim off the foam. Thicken with the wet cornstarch slurry, drizzle in the beaten egg and stir to combine. Sprinkle with MSG, chopped cooked ham, and chopped scallion, drizzle with sesame oil, and serve.
