Make the dough
Combine bread flour, all-purpose flour, 35g softened butter, sugar, and salt in a large bowl. Add just enough cold water to bring the dough together. Shape into a rectangle, wrap in plastic, and chill for 30 minutes.
Incorporate puff butter
Pound the 180g block butter between two sheets of parchment until flat and pliable. Roll out the chilled dough into a larger rectangle, place the butter in the center, and fold the dough over like a letter. Roll and fold three times, chilling between each fold.
Prepare fillings
Cook one beaten egg in a lightly oiled pan to make a thin omelette, then slice into thin strips. Spread mayonnaise on both slices of toast. Layer ham and cheese on one slice, top with egg strips, and cover with the second slice.
Assemble and bake
Roll out the puff pastry to about 1/4 inch thickness. Cut into rectangles large enough to wrap around the sandwich. Place the sandwich in the center, brush edges with beaten egg, fold over and seal. Brush the top with egg wash. Bake at 400°F (200°C) for 18-20 minutes until deep golden brown.
