This warm, nourishing pumpkin and carrot porridge gets an extra nutrition boost from a small amount of oil, as carotene is a fat-soluble compound that the body can absorb much more efficiently when paired with dietary fat.

Ingredients

rice
pumpkin
carrot
cooking oil
salt

Instructions

Step 1

Peel the pumpkin and cut it into chunks.

Wash the carrot, cut into chunks, and set aside.

Rinse the rice thoroughly, then soak for 30 minutes.

Add a suitable amount of water to a clay pot, bring to a boil, then add the rice and drizzle 5 to 6 drops of peanut oil.

After boiling, simmer over low heat for 20 minutes, then add the pumpkin chunks and carrot.
