Pumpkin Sauce Soup

Ingredients

Tender pumpkin (cut into 4 wedges, peeled, deseeded, stems removed, cut into 3 cm cubes) 500 g
Chicken (washed, sinew removed, cut into 6 cm strips) 100 g
Small green peppers (washed, stems removed, cut into strips) 25 g
Large scallion whites (cut into strips) 100 g
Fresh chili peppers (washed, stems removed, cut into strips) 25 g
Chili paste 15 g
Soybean paste 10 g
Clear rice broth 500 ml
Soy sauce (for marinating the chicken) 10 g
Scallion strips (for marinating) 10 g
Minced garlic 5 g
Sugar 15 g
Ground pepper 3 g
Fine salt 2 g
Peanut oil (for stir-frying) 25 g

Marinate the chicken

Rinse the chicken, remove the sinew, and cut it into 6 cm strips. Marinate with soy sauce, scallion strips, minced garlic, sugar, ground pepper, and fine salt until seasoned, then set aside.

Prepare the vegetables

Cut the tender pumpkin into 4 wedges, peel, deseed, remove the stems, and cut into 3 cm cubes. Wash the small green peppers and fresh chili peppers, remove the stems, and cut both into strips.

Stir-fry into soup

Heat a wok, add the peanut oil, and when it reaches about 50% hot, add the marinated chicken strips and stir-fry briefly. Add the pumpkin, small green peppers, fresh chili peppers, and scallion whites, stir to combine, bring to a boil, and serve.
