Banana Cookies

Long cookies made from ripe banana puree combined with black sesame seeds; the finished cookies can be decorated by dipping them in chocolate.

Banana Cookies

Ingredients

butter 80 g
caster sugar 40 g
egg yolk 1
banana (ripe, mashed) 65 g
black sesame 30 g
whole wheat flour (sifted) 30 g
cake flour (sifted) 80 g
baking soda (sifted) 3 g
chocolate for decoration 60 g

Instructions

Step 1

Cream the butter and caster sugar until pale and fluffy, then add the egg yolk and mix until well combined.

Mash the ripe banana into a puree and fold it into the mixture from Step 1 until evenly incorporated.

Add the black sesame and mix until evenly distributed throughout the batter.

Sift in the whole wheat flour, cake flour, and baking soda, then gently fold into the batter until just combined.

Transfer the batter into a piping bag and pipe strips about 5 cm long onto the baking sheet.

Bake in a small oven using top and bottom heat at 160 °C for about 15 minutes.

Remove the baked cookies, let them cool completely, then dip each one in the chocolate to decorate.
