purple sweet potato 1

Soak the snow fungus in clear water for 4 hours in advance, wash clean, and tear into small florets. Wash the purple sweet potatoes, peel, and cut into small chunks.

Pour an appropriate amount of clear water into a pot, add the snow fungus, and bring to a boil over high heat.

Add the purple sweet potato chunks and continue to bring to a boil. After that, simmer over low heat for 20 minutes until the snow fungus is fully cooked and the liquid becomes thick and sticky.

When done cooking, it will be a very dull, dark color. Do not worry, this is a natural phenomenon. Squeeze two drops of lemon juice into it, and it will turn into a beautiful color. If you don't have lemon juice, white vinegar will also work. Dip a little white vinegar with a spoon, then quickly stir it into the snow fungus soup, and the color will change.
