Step 1
Ingredients picture: 100g raspberry puree (can be replaced with any flavor you like~ strawberry, blueberry, orange...) 50g + 60g invert sugar (glucose syrup can be used as a substitute, sold in large supermarkets) 15g gelatin (3 sheets) 150g sugar 5g lemon juice powdered sugar, as needed
Step 2
First, bring 100g fruit puree and 50g invert sugar (glucose syrup) to a boil over high heat~

The boiled fruit puree looks like this~ big bubbling bubbles!

Then, add 150g sugar, 60g invert sugar (glucose syrup), and 5g lemon juice, and cook over medium heat until it reaches 110 degrees Celsius (if you don't have a thermometer at home, see the picture below; just cook until the sugar is completely melted and large bubbles form).
Step 5
While cooking the syrup~ we need to soak the gelatin sheets in cold water first to soften them. Then, melt them into a liquid over hot water.
Step 6
Pour the above three liquids into a stand mixer and beat continuously at the highest speed. This is what it looks like halfway through beating. Look, the color of the mixture has lightened~ and it's getting thicker and thicker~

Beat until it reaches the state shown in the picture~ unbelievable, right~ it has turned from a liquid into sticky marshmallow~
Step 8
Sprinkle the baking pan evenly with powdered sugar (to prevent the marshmallow from being too sticky) and spread the marshmallow mixture onto the pan. Use a spatula to smooth it out, dipping it in a little powdered sugar as you smooth, and repeating. Alternatively, sprinkle powdered sugar on the surface of the marshmallow before smoothing it out.
Step 9
This is what the smoothed-out marshmallow looks like~ Pink and so cute. At this point, the marshmallow is still very sticky; you can let it sit for a few hours and lay a layer of parchment paper on the surface to keep it dry. (Do not put it in the refrigerator, because the moisture in the fridge will cause the marshmallow to melt.) (Do not cover it with plastic wrap, because it is not breathable.)

Use your favorite molds to stamp out cute shapes and you're done~
