This recipe uses a bread machine for effortless kneading and baking. The purple sweet potato creates natural color and subtle sweetness, while the plain dough provides soft, fluffy texture.

Ingredients

bread flour 500g (about 4 cups)
purple sweet potato, cooked and mashed 150g (about 1 cup)
granulated sugar 50g (1/4 cup)
salt 8g (1.5 tsp)
dry milk powder 25g (3 tbsp)
unsalted butter, softened 40g (3 tbsp)
instant yeast 7g (2.5 tsp)
warm water 250ml (1 cup + 1 tbsp)
egg 1 large

Prepare the sweet potato

Steam or boil purple sweet potatoes until very tender. Drain well and mash until completely smooth. Let cool to room temperature before using.

Add wet ingredients to bread machine

Crack the egg into a measuring cup and add warm water to reach 280ml total liquid. Pour into the bread machine pan. Add sugar, salt, and milk powder.

Add dry ingredients

Add bread flour, making sure it covers the liquid. Create a small well in the center and add instant yeast. Place softened butter in a small pile on top of the flour.

Add purple sweet potato

For a swirled effect, add the mashed purple sweet potato in a separate layer on top of the flour, or reserve 3 tablespoons to swirl in after the first kneading cycle if your machine allows.

Start the bread machine

Close the lid and select the basic/white bread program with a medium crust setting. Press start and let the machine handle mixing, kneading, proofing, and baking.

Remove and cool

When the cycle finishes, immediately remove the loaf from the pan. Let cool on a wire rack for at least 30 minutes before slicing to allow the crumb to set properly.
