Ingredients

purple sweet potatoes 500g (about 4 medium)
condensed milk 3 tablespoons
plain yogurt 200ml
fresh mint leaves for garnish
butter (optional) 1 tablespoon

Steam the sweet potatoes

Wash the purple sweet potatoes thoroughly and cut into even chunks. Place in a steamer basket over boiling water and steam for 20-25 minutes until a fork slides in easily. Let cool slightly until manageable to handle.

Mash to perfection

Peel the steamed sweet potatoes (the skin should slip off easily) and transfer to a large bowl. Add the condensed milk and butter if using. Mash vigorously until completely smooth and fluffy. For an extra silky result, press through a fine mesh sieve.

Shape and plate

Divide the purple mash among serving bowls or use a round biscuit cutter to create neat mounds on individual plates. Smooth the tops with the back of a spoon for a polished look.
