Quick Pancakes
There are many methods for making pancakes, and this recipe is the simplest of all, with an extremely high success rate. Many failed attempts are not due to poor cooking skills, but choosing the wrong flour.
This pancake recipe requires low-gluten (low-protein) flour, which has low protein content to produce a soft, fluffy texture, and is typically used for desserts such as cakes. For this recipe, I use Arawana pastry flour, a low-gluten flour made from 100% imported wheat of excellent quality, resulting in very delicious pancakes.
Be sure to select the correct flour type: high-gluten flour will not work for this recipe.

Instructions
Step 1
Prepare the required ingredients, and have a manual whisk or an electric whisk ready as your tool.
Step 2
Add the egg, milk, and fine granulated sugar into a container.
Step 3
Use a manual whisk to stir for a while, or switch to an electric whisk and beat for two to three minutes, so that the egg mixture, milk, and sugar are thoroughly combined and the sugar is fully dissolved.
Step 4
Sift the flour and aluminum-free baking powder into the milk and egg mixture.
Step 5
Continue to mix evenly with the whisk. Be sure to stir the batter until there are no lumps, looking very fine and smooth. If you plan to eat it in the morning, you can mix the batter ahead of time and refrigerate it overnight.
Step 6
Heat a non-stick pan over medium-low heat. Once hot, scoop in a spoonful of batter. No oil is needed in the pan; just keep it dry. After pouring the batter in, do not move it; let the batter flow out naturally on its own.
Step 7
Do not flip the pancake during heating. Be patient; the batter will gradually set and small bubbles will appear on the surface. Flip when the batter is almost fully set.
Step 8
Cook the other side for a short while. You can flip to check at any time; the back only needs to turn slightly golden brown.
Step 9
Once cooked, take it out of the pan. You can quickly cook several pancakes in a row. Stack the pancakes, dust with a layer of moisture-proof powdered sugar, and arrange some berries on top for decoration. I drizzled some honey on the surface, which is very sweet and fragrant.
