Min (Fujian) Red Bean Paste Buns: leavened dough filled with sweet red bean paste and sugar-cured pork fat dice, steamed over high heat.

Red Bean Paste Buns

Ingredients

flour 1000 g
fresh yeast (mixed with warm water into a paste) 0.5
red bean paste filling 600 g
sugared lard cubes (a small piece wrapped inside the filling) 100 g

Instructions

Mix and Ferment the Dough

Mix the fresh yeast with warm water into a paste, pour it into the flour, add water and knead thoroughly, then let rest for 2 hours.

Shape and Fill the Buns

Roll the dough into strips, portion into portions, then press each into a round wrapper with a thick center and thin edges. Place the red bean paste filling inside along with a small piece of sugared lard and seal.

Steam the Buns

Place the buns in the steamer and let rest for 2-3 minutes, then steam over high heat with boiling water for about 15 minutes until done.
