Red-Braised Pork Trotters

Ingredients

Cleaned pork trotters 600 g
Garlic (minced) 2 cloves
Scallion (washed and cut into sections) half
Fine salt 3 tsp
White sugar 3 tsp
MSG 2 tsp
Stock 2 tbsp
Secondary stock 1 tbsp
Dark soy sauce 0.5 tbsp
Wet cornstarch 0.5 tbsp
Peanut oil 3 tsp

Preparation

Wash the scallion and cut into sections; mince the garlic.

Frying

Coat the cleaned pork trotters with dark soy sauce, then deep-fry in warm oil until deep red. Place them in a stewing pot (with a bamboo mat at the bottom), add stock, 1 tsp fine salt, and 1.5 tsp white sugar, and simmer over heat for 1 hour until tender and falling apart. Remove and set aside.

Braising

Heat 0.5 tbsp oil in a wok, add minced garlic, scallion sections, fine salt, secondary stock, white sugar, MSG, and the pork trotters. After briefly braising, thicken with dark soy sauce mixed with wet cornstarch.
