Prep the dates
Place the red dates in a bowl and cover with warm water. Let them soak for about 10 minutes until they become soft and pliable. Drain, then remove the pits and chop the dates into small bite-sized pieces.
Mix the batter
In a large mixing bowl, combine the glutinous rice flour and sugar. Slowly pour in the water while stirring continuously until you achieve a smooth, thick batter with no lumps. Gently fold in the chopped red dates.
Steam the cake
Grease a heatproof steaming dish or cake pan. Pour the batter in and smooth the top with a spatula. Place in a steamer over boiling water, cover, and steam for 20 minutes until the cake is firm and springs back when lightly touched.
Rest and serve
Turn off the heat but leave the lid on for another 10 minutes. This allows the cake to finish cooking through the center and makes slicing much easier. Serve warm or at room temperature.
