Red Fermented Pig's Trotters

Ingredients

Pig's trotters as needed
Cooking wine to taste
Bay leaf as needed
Star anise as needed
Cinnamon stick as needed
Rock sugar to taste
Light soy sauce to taste
Dark soy sauce to taste
Green onion sections as needed
Ginger slices as needed
Filtered red fermented juice as needed
Cooking oil as needed

Instructions

Clean and Blanch

Clean the purchased pig's trotters (usually pre-cut at the supermarket). Soak in water to remove blood, then place in a pot with an appropriate amount of cooking wine. Blanch to remove the raw gamey taste.

Aromatics and Sugar

Heat a little oil in the pan. Add bay leaf, star anise, cinnamon stick, and rock sugar. Stir-fry until fragrant.

Add Soy Sauces

Pour in an appropriate amount of light soy sauce and dark soy sauce. Stir-fry the sauces briefly.

Combine and Simmer

Once the seasonings are partially cooked, add the green onion sections, ginger slices, and the filtered red fermented juice to the pot.
