Red Wine Poached Pears
A classic dessert made by slowly simmering pears in red wine with aromatic spices — an elegant way to use up leftover wine and ripe pears.
Ingredients
Pear (leftover, not sweet)
to taste
Red wine (not worth pairing with food or drinking on its own)
to taste
Lemon (juiced)
1
Orange peel
a few
Cinnamon
a pinch
Cloves
a pinch
Nutmeg
a pinch
Sweet wine (optional)
a little
Instructions
1
Prepare the ingredients
Pour the red wine into a pan, squeeze in the lemon juice, add the prepared orange peel, along with a pinch of cinnamon, cloves, and nutmeg. Optionally add a little sweet wine.
2
Poach the pears
Place the pears into the pan and cook together until the red wine comes to a boil, then turn off the heat.
3
Soak
Be patient and let the pears soak in the poached red wine for another fifteen to twenty minutes so they can cool and absorb the flavors.
4
Chill (optional)
If you have the patience, place the pears along with the wine into the refrigerator and chill for a full day and night before eating — the flavor will be even richer.
