Preparing the Dried Tofu
Place the dried tofu in a pot of water with a little salt and simmer briefly. Remove and press firmly on a cutting board to squeeze out the moisture, then slice into thin shreds. Put the shreds in a bowl and scald them three times with boiling water to remove the yellow odor.
Preparing the Ginger
Peel the ginger, cut it into thin shreds, and soak them in a bowl of water.
Preparing the Roast Duck
Debone the roast duck and slice it into thin shreds; chop the duck bones into pieces.
Cooking the Duck Bone Soup
Heat a wok over the fire, add oil, and sauté the scallions and ginger until fragrant. Add the duck bones, splash in the Shaoxing wine, pour in the water, and bring to a rolling boil to make the soup.
Cooking the Dried Tofu Shreds
Strain the prepared duck bone soup into a clean pot, add the dried tofu shreds and simmer briefly, then add the roast duck shreds and salt. Simmer for 10 minutes and finally stir in the rendered duck fat.
Plating
Transfer to a shallow serving dish and garnish with the ginger shreds to finish.
