Instructions
Preparing the Rabbit
Skin the wild rabbit, remove the innards, head, feet, and silverskin, then wash. After soaking in cold water for one day, remove, drain, pat dry, and use a skewer to prick the thick parts of the meat several times.
Marinating the Rabbit
In a large porcelain bowl, combine the soy sauce, chopped scallion, minced garlic, sugar, ground black pepper, toasted sesame powder, and minced ginger; mix well. Add the rabbit and rub the marinade thoroughly over the body and inside the cavity. Marinate in the large bowl for half a day. Once seasoned, set aside. (The original step reads 'ca mo' (擦秣), which appears to be an OCR error for 'ca mo' (擦抹, meaning 'to rub').)
Making the Dipping Sauce
Now prepare the dipping sauce: first pour 90 g soy sauce and 30 g sesame oil into a porcelain bowl, then add 16 g soybean paste (da jiang), 8 g chili oil, 5 g garlic paste, 6 g fine salt, and 50 g sugar. Stir, then pour into each person's individual bowl. The original ingredient list does not include soybean paste, chili oil, or fine salt; these items may have been omitted.
Roasting the Rabbit
Place the marinated rabbit on a roasting tray, brush evenly with sesame oil, and put it in the oven to roast. Every half hour, brush with more sesame oil and turn the rabbit, until fully cooked. Remove from the oven. (The original text is missing a period after 'remove from the oven'.)
Serving
To serve, chop the whole rabbit into small pieces, divide among individual serving bowls, and eat by dipping into the prepared sauce.
