Story

This traditional Chinese remedy has been loved for generations. The pears become melt-in-your-mouth tender while the rock sugar creates a delicate, barely-sweet syrup. Goji berries add a pop of color and subtle earthiness.

Ingredients

snow pears 2 medium (about 400g)
rock sugar 40g
goji berries 1 tablespoon
water 800ml

Prepare your ingredients

Rinse the pears under cold water and peel if desired. Cut each pear into bite-sized chunks, removing the core. Briefly soak the goji berries in warm water until slightly softened, then drain.

Start the simmer

Pour water into a medium pot and add the rock sugar. Bring to a gentle boil over medium heat, stirring occasionally until the sugar dissolves completely.

Cook the pears

Add the pear chunks to the pot. Reduce heat to low and let simmer gently for about 20 minutes, until pears are tender and have absorbed the sweet syrup.

Finish and serve

Stir in the goji berries during the last 2 minutes of cooking. Remove from heat and serve warm, spooning the tender pears and silky broth into bowls.
