Rose Wine Salted Chicken

Ingredients

Young hen (slaughtered, cleaned, 700-800g preferred) 1
Vegetable oil 100 g
Rose wine 15 g
Star anise a pinch
Salt 12 g
MSG 6 g
Green onion 1
Ginger 3 slices

Instructions

1

Marinate the Chicken

Rub the outside of the cleaned, slaughtered young hen with salt and MSG, then pour rose wine into the cavity and rub the inner surface with salt.

2

Wrap and Place in Pot

Place the star anise, green onion, and ginger on the chicken, wrap tightly with rice paper (do not wrap too tightly as it may affect heat transfer), then put it into a sand pot.

3

Salt Bake Until Cooked

Heat coarse salt until extremely hot, then pour it into the sand pot. Fill all sides of the pot with the hot salt, cover the lid tightly, and place in a warm area. After 40 minutes, remove the chicken, unwrap the rice paper, and check if it is fully cooked.

4

Make Dipping Sauce

Place shredded green onion, shredded ginger, salt, and MSG in a bowl. Heat the vegetable oil until smoking in a wok, then pour it into the bowl with the green onion and ginger mixture. Serve alongside the salted chicken.
