Rye sticks with caraway seeds

Crunchy breadsticks made with rye flour and caraway seeds, ideal as an appetizer to serve with cheese.

Rye sticks with caraway seeds

Ingredients

plain flour 90 g
rye flour 75 g
salt 1/2 tsp
baking powder 1/2 tsp
butter (diced) 90 g
caraway 2 tsp
boiling water 4 tbsp

Make the dough

Preheat the oven to 180°C (gas mark 6). In a bowl, mix both flours, the salt and the baking powder. Add the butter and rub it in until the mixture resembles breadcrumbs. Stir in 1 teaspoon of caraway. Pour in 4 tablespoons of boiling water and stir to form a smooth dough.

Shaping

Divide the dough into 18 equal portions. Roll each portion with your fingers into a stick about 25 cm long. Try to keep them all the same length. If the mixture is too wet, do not add flour (unless absolutely necessary).

Coating with seeds and baking

Sprinkle the remaining caraway onto the work surface and roll the breadsticks in it to coat them with seeds. Place the breadsticks on a non-stick baking tray. Bake for 20 minutes until the breadsticks are crisp. Cool on a wire rack.
