Salmon in Lime Sauce

Salmon in Lime Sauce

Ingredients

tomato (chopped) 1 small
sweet red pepper (chopped) 1 small
green onions (thinly sliced) 2
lime juice 2⁄3 cup
vegetable oil 2 tablespoons
grated lime peel 1⁄2 teaspoon
cayenne pepper 1⁄4 to 1⁄2 teaspoon
salmon fillet (11⁄2 pounds) 1

Instructions

Marinate

Mix the first 7 ingredients in a large resealable plastic bag; stir until evenly combined. Cut the salmon into 4 pieces and add them to the bag. Seal the bag and turn it to coat the salmon with the marinade; refrigerate for 30 minutes.

Grill

Drain the fish and vegetables from the marinade and discard it. Place each piece of salmon and about 1/3 cup of the vegetable mixture on a double layer of heavy-duty foil (about 18 inches square). Fold the foil over the mixture and seal tightly. Grill, covered, over medium heat for 15–20 minutes, until the salmon flakes easily with a fork.
