Ingredients

celery stalks 2, diced
shiitake mushrooms 150g, sliced
red bell pepper 1, diced
eggs 2
garlic cloves 2, minced
scallions 2 stalks, chopped
satay sauce 2 tablespoons
salt to taste
chicken powder 1/2 teaspoon
vegetable oil 2 tablespoons

Prep the vegetables

Dice the celery and red bell pepper into small bite-sized pieces. Slice the shiitake mushrooms. Scramble the eggs in a hot pan with a little oil, then break them into small pieces and set aside.

Bloom the aromatics

Heat oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir until golden and fragrant, about 30 seconds. Toss in the scallions and stir briefly.
