Prepare the filling
Heat vegetable oil in a wok or large pan over medium-high heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the ground pork and break it apart with a spatula. Cook until the pork is browned and cooked through, about 5-6 minutes. Season with soy sauce and a pinch of salt. Remove from heat and let cool slightly.
Cook the bean sprouts
In the same pan, add a little more oil if needed. Add the bean sprouts and stir-fry for 1-2 minutes until they are just tender but still crisp. Remove from heat and set aside to cool.
Assemble the rolls
