Clean the chicken feet thoroughly and trim off the nails.

Bring water to a boil in a pot, add the chicken feet and boil for one minute. Add a spoonful of light soy sauce during boiling to help color the chicken feet.

Remove the boiled chicken feet and drain off the water.

Deep-fry the chicken feet until golden brown. Cover the pot during frying to prevent oil splatter.

Soak the fried chicken feet in hot water for one hour.
