Ingredients

bulk Italian sausage 1-1/2 lb
crushed tomatoes 2 cans (28 oz each)
bay leaf 1
garlic cloves (chopped) 3 to 4
sugar 2 tsp
dried basil 1 tsp
dried oregano 1/2 tsp
salt 1/2 tsp
pepper 1/4 tsp
eggs (beaten) 4
grated Parmesan cheese (divided use) 1/2 cup
ground nutmeg 1/8 tsp
frozen chopped spinach (thawed and squeezed dry) 2 packs (10 oz each)
extra wide noodles (cooked and drained) 1 pack (12 oz)
green onions (sliced) 4
shredded part-skim mozzarella cheese 4 cups (16 oz)

Make the meat sauce

Cook the sausage in a Dutch oven until no longer pink; drain. Add tomatoes, bay leaf, garlic, sugar, basil, oregano, salt and pepper; bring to a boil. Reduce heat to low, simmer uncovered for 1 hour, stirring occasionally.

Prepare the noodle mixture

Meanwhile, in a bowl mix eggs, 1/4 cup Parmesan cheese and nutmeg; stir until well combined. Stir in spinach, noodles and green onions.

Layer in baking dishes

Discard the bay leaf from the sausage mixture. In two greased 9-inch square baking dishes, spread one quarter of the noodles and one quarter of the sausage mixture in each dish. Top each with 1 cup mozzarella cheese. Repeat the layers. Finish by sprinkling with the remaining Parmesan cheese.

Bake

Bake uncovered at 350°F for 30 minutes or until bubbly. Let stand for 10 minutes before serving.
