Sauteed Watermelon Rind

Ingredients

Thick watermelon rind (peel off the outer thin skin, scrape off remaining pulp, cut into uniform thick slices) 500 g
Peanut oil 40 g
Sesame oil 10 g
Refined salt 8 g
Cornstarch slurry 10 g
Water 100 g
Minced scallion 5 g
Minced ginger 5 g

Preparation and Blanching

Peel off the outer thin skin of the watermelon rind, scrape off any remaining pulp, wash it with cold water, cut into uniform thick slices. Blanch the slices in a pot of boiling water briefly, then remove and rinse with cold water, and drain thoroughly.

Cooking

Place a wok over heat and add the oil. Once the oil is hot, add the minced scallion and ginger. When fragrant, pour in the water and salt, then add the watermelon rind. Switch to low heat and simmer for 1-2 minutes until the rind absorbs the flavor. Thicken with the cornstarch slurry, drizzle in a few drops of sesame oil, and serve.
