Ingredients

Pork ribs 400g
Carrots 2 large
Ginger 3 slices
Cooking wine 1 tablespoon
Salt to taste
Water enough to cover

Prepare Ingredients

Wash the pork ribs thoroughly. Peel the carrots and cut them into thick chunks. Slice the ginger.

Blanch the Ribs

Bring a pot of water to a boil. Add a splash of cooking wine and the ribs. Cook for a few minutes until the grey scum rises to the surface. Drain the ribs, rinse them under cold water, and set aside.

Simmer the Soup

Place the cleaned ribs, carrot chunks, and ginger slices into a clean pot. Add enough water to cover all ingredients. Bring to a boil, then reduce the heat to low. Cover and simmer gently for about 45 minutes.
