Savory Carrot and Pork Rib Soup
A comforting, clear soup featuring tender pork ribs and sweet carrots, gently simmered to perfection.
Story
This warming broth is a staple in Chinese households, especially during colder months. The key is blanching the ribs first to ensure the soup remains clear and free of scum.

Instructions
Prepare Ingredients
Wash the pork ribs thoroughly. Peel the carrots and cut them into thick chunks. Slice the ginger.
Blanch the Ribs
Bring a pot of water to a boil. Add a splash of cooking wine and the ribs. Cook for a few minutes until the grey scum rises to the surface. Drain the ribs, rinse them under cold water, and set aside.
Simmer the Soup
Place the cleaned ribs, carrot chunks, and ginger slices into a clean pot. Add enough water to cover all ingredients. Bring to a boil, then reduce the heat to low. Cover and simmer gently for about 45 minutes.
Season and Serve
Once the ribs are tender and the broth is flavorful, add salt to your taste. Ladle the hot soup into bowls and serve immediately.
