This simple yet satisfying soup is a staple in many Chinese households. The combination of fatty pork, protein-rich tofu, and mineral-packed seaweed creates a balanced dish that's both nutritious and delicious.

Ingredients

Pork belly 300g
Firm tofu 200g
Dried seaweed (kelp) 10g
Fresh ginger 3 slices
Cooking wine (Shaoxing) 1 tablespoon
Salt to taste
Water 1.5 liters

Prep the ingredients

Cut the pork belly into bite-sized chunks. Cut the tofu into 2cm cubes. If using dried seaweed, soak it in warm water for 5 minutes until softened, then drain and cut into manageable pieces.

Start the broth

Add water to a large pot and bring to a boil. Add the pork belly pieces, ginger slices, and cooking wine. Let it come back to a boil, then reduce heat to a gentle simmer.

Simmer the pork

Keep the pot at a low simmer for about 10 minutes. This allows the pork to release its flavors and become tender. Skim off any foam that rises to the surface.

Add tofu and seaweed

Add the tofu cubes and seaweed to the pot. Continue simmering for another 10 minutes, being careful not to stir too aggressively to keep the tofu intact.

Season and serve

Taste the broth and add salt as needed. Divide into bowls and serve hot. The soup is best enjoyed fresh while still warm.
