Clean and Blanch the Duck
Rinse the duck pieces thoroughly under cold water. Place them in a pot of boiling water for a few minutes to blanch, then remove and rinse again to remove any impurities.
Start the Simmer
Bring a large pot of fresh water to a boil. Add the blanched duck pieces and ginger slices. Once the water returns to a boil, reduce the heat to low.
Slow Cook
Cover the pot and let it gently simmer for about 2 hours. Do not lift the lid or increase the heat during this time to ensure the meat becomes tender.
Add Vegetables
