Make the braising sauce
In a small bowl, whisk together light soy sauce, dark soy sauce, cornstarch, and water until smooth. Set aside. Slice your scallions into diagonal pieces about 2 inches long.
Prepare and cook the tofu
Gently tear the tofu into irregular 2-inch chunks by hand—don't cut it, as the rough edges fry up crispier. Heat oil in a wide skillet over medium-high heat. Add tofu pieces in a single layer and cook without moving for 3-4 minutes until the bottom turns golden and crisp. Flip carefully and cook another 2 minutes.
Glaze with sauce
