Scallion Braised Tofu

Story

This dish is known for its silky tofu texture and fragrant scallion flavor. The key is tearing the tofu by hand rather than cutting it—this creates rougher edges that crisp up nicely when pan-fried.

Ingredients

firm tofu 400g block
scallions 4 stalks, cut into 2-inch sections
light soy sauce 2 tablespoons
dark soy sauce 1 tablespoon
cornstarch 1 tablespoon
water 1/2 cup
vegetable oil 3 tablespoons
salt pinch to taste

Make the braising sauce

In a small bowl, whisk together light soy sauce, dark soy sauce, cornstarch, and water until smooth. Set aside. Slice your scallions into diagonal pieces about 2 inches long.

Prepare and cook the tofu

Gently tear the tofu into irregular 2-inch chunks by hand—don't cut it, as the rough edges fry up crispier. Heat oil in a wide skillet over medium-high heat. Add tofu pieces in a single layer and cook without moving for 3-4 minutes until the bottom turns golden and crisp. Flip carefully and cook another 2 minutes.

Glaze with sauce

Pour the prepared sauce over the tofu. Add the scallions and gently toss everything together. Cook for 1-2 minutes, stirring occasionally, until the sauce thickens and coats each piece of tofu.
