Scallion Oil Cold Noodles

Cold noodles served with dried shrimp, yulan (tender bamboo shoot) slices, and shiitake mushrooms, tossed in a special scallion oil sauce.

Scallion Oil Cold Noodles

Ingredients

noodles 500 g
dried shrimp (washed, soaked in a pinch of hot water until soft, then minced) 100 g
soaked bamboo shoots (washed, diced small, blanched, drained, and cooled) 50 g
shiitake mushrooms (washed, diced small, blanched, drained, and cooled) 50 g
scallions (white parts finely minced) 50 g
soybean oil 10 g
soy sauce 5 g
fine salt 3 g
monosodium glutamate 2 g
sesame oil 5 g

Instructions

Prepare the ingredients

Rinse the dried shrimp, soak in a pinch of hot water until soft, then mince. Wash the bamboo shoots and shiitake mushrooms, dice them small, blanch, drain, and let cool. Mince the scallion whites and set aside.

Make the scallion oil

Heat the oil, add the minced scallion whites and fry until fragrant to make scallion oil, then let cool.

Mix the sauce

Combine the scallion oil, soy sauce, fine salt, monosodium glutamate, and sesame oil in a bowl and whisk into a scallion oil dressing.

Toss and serve

Sprinkle the minced dried shrimp, bamboo shoot dice, and mushroom dice over the cold noodles, pour the scallion oil dressing over the top, toss to combine, and serve immediately.
