Ingredients

sugar 3 cups
water 2⁄3 cup
light corn syrup 1⁄2 cup
egg whites 2
salt 1⁄8 teaspoon
vanilla extract 1 teaspoon
pine nuts (toasted) 1 cup

Step 1

In a heavy saucepan, combine the sugar, water, and corn syrup; bring to a boil over medium-high heat, stirring constantly. Cook over medium heat without stirring until a candy thermometer reads 260°F (hard ball stage), about 10-15 minutes. Remove from heat.

Step 2

In a large mixing bowl, beat the egg whites and salt until stiff peaks form. With the mixer on high speed, gradually pour the hot sugar mixture in a thin stream over the egg whites; continue beating for about 3 minutes. Add the vanilla; beat until the candy begins to lose its gloss, about 5 minutes. Stir in the pine nuts.

Step 3

Working quickly, drop by tablespoonfuls onto wax paper; or pour into a buttered 9-inch square pan and cut into bite-sized pieces. Store tightly covered. Yield: about 3 dozen.
