Scallion Stir-Fried Shredded Pork

Ingredients

lean pork (shredded) 200g
scallions (washed, cut into diagonal sections; keep the white parts separate from the green sections) 200g
red bell pepper (washed, seeds removed, cut into thin strips) 1/2
light soy sauce 1 tsp
cooking wine 1 tsp
cornstarch 1/2 tsp
oil (for marinating) 1/2 tbsp
salt (for the slurry) to taste
sugar (for the slurry) to taste
cornstarch (for the slurry) to taste
water (for the slurry) to taste
sesame oil (for the slurry) to taste

Instructions

Marinate the pork strips

Cut the lean pork into thin strips. Add the seasonings (light soy sauce, cooking wine, cornstarch, oil), mix well, and pass through warm oil to set aside.

Prepare the vegetables

Wash the scallions and cut them into diagonal sections. Wash the red bell pepper, remove the seeds, and cut into thin strips.

Stir-fry and serve

Heat the wok, add two tablespoons of oil, and sauté the white parts of the scallions until fragrant. Add the pork strips, splash in the cooking wine, then add the remaining scallion sections, the slurry ingredients, and the red bell pepper strips. Toss everything together briefly and serve.
