Gold and Silver Egg Dumplings

Separate egg whites and yolks to make individual egg crepes, wrap each around meat filling to form two-tone egg dumplings, steam until cooked through, then serve drizzled with sauce.

Gold and Silver Egg Dumplings

Ingredients

Eggs (separate whites and yolks, beat separately) 10
Lean pork (minced and seasoned into filling) 300 g
Fatty pork (for greasing the ladle) 100 g
Fine salt (for seasoning egg mixture and filling) 4 g
Water starch (added to egg mixture) 30 g
MSG (for seasoning) 5 g
Scallion (finely chopped) 10 g
Ginger (finely chopped) 10 g

Prepare egg mixture and filling

Crack the eggs and separate the whites and yolks into two bowls. Add water starch and fine salt to each bowl and beat well with chopsticks until evenly mixed. Mince the lean pork and season it into a filling.

Make the egg dumplings

Heat a cooking ladle over the fire, then use the raw fatty pork to grease the inside of the ladle. Take one small spoonful of egg white, pour it into the ladle, swirl it into a small round egg skin, add a portion of the meat filling, and fold it into an egg dumpling shape. Repeat to make 15 white egg dumplings. Use the same method with the egg yolk mixture to make 15 more yellow egg dumplings.

Steam and finish with sauce

Arrange the two colored egg dumplings on opposite sides of a bowl. Steam over a pot for 10 minutes, then remove and invert onto a plate. Pour the prepared white sauce over the dumplings, sprinkle with chopped scallion and pepper, drizzle with sesame oil, and serve.
