Scallion Whites with Wood Ear and Snow Fungus

Ingredients

Soaked black wood ear mushrooms 100 g
Soaked silver ear mushrooms (snow fungus) 150 g
Scallion whites (cut into small sections) 50 g
Peanut oil 50 g
Refined salt 4 g
MSG (monosodium glutamate) 2 g
Sugar 1 g

Instructions

Make the scallion oil

Place the wok over heat, add the peanut oil and heat it up. Add the chopped scallion whites, switch to low heat, and continuously stir-fry until they turn deep yellow. Transfer the scallions together with the oil into a small bowl. Once cooled, the scallion oil is ready.

Prepare the double ears

Combine the soaked black wood ear and silver ear mushrooms together, blanch briefly with boiling water, squeeze dry, and place them in a bowl.

Season and mix well

While still warm, sprinkle in the refined salt, sugar, and MSG, drizzle with the scallion oil, mix well, and transfer to a serving plate. It is ready to serve.
